Lasagna is always the queen of the table, even when the filling comes from the garden instead of the ragù. In this course, you will learn how to make a vegetarian lasagna that changes throughout the year, following what the earth offers in every season.
We will start right away with our hands in the dough. I will teach you how to prepare the thin pasta sheet – green with nettle or yellow with eggs, depending on the needs. Then we will move on to the filling: fresh vegetables chosen based on the best the moment has to offer – artichokes, zucchini and their flowers, pumpkin, mushrooms, or more. Vegetables with body and personality. You will also prepare the creamy béchamel and the tiramisù.
Layer after layer, you will build your lasagna with care. Béchamel, fragrant vegetables, freshly grated Parmesan – every element in its place.
When everything is ready, we will sit around the table. We will start with a fresh vegetable pinzimonio, then your steaming lasagna will arrive from the oven, followed by a seasonal salad. We will toast with a glass of local wine and conclude with tiramisù and a good coffee.
