This class is a journey through Emilia that starts immediately with your hands in the dough. I will teach you how to prepare thin sfoglia, how to fold tortelloni filled with fresh ricotta, and how to cut the tagliatelle that we will season with my family's traditional ragù recipe.

When everything is ready, we will sit around the table to enjoy the fruits of our labor. We will start as we do in Bolognese homes when guests arrive: with a beautiful board of local cured meats, aged Parmigiano Reggiano, balsamic vinegar, and "streghe" (do you know what they are?), all accompanied by a glass of local wine. As we taste, I will tell you the stories behind these products – because in Bologna, we don't just eat, we share heritage. Then, your steaming tortelloni and your tagliatelle with ragù will arrive. We will conclude with a good coffee, just like after any proper Italian lunch.
